Caponata
First 'cab off the rank' for this group is Caponata, a Sicilian vegetable dish comprising Eggplant, Tomato, Capsicums and Zucchini.
Ingredients
- 1 Zucchini
- 1/2 Eggplant
- 1 Red Capsicum
- 1 Green or Yellow Capsicum
- 250-300 grams Cherry Tomatoes
- 1 Medium Spanish (Purple) Onion
- As much as you like of:
- Anchovies, Capers, Pitted Olives, Garlic, flat leaf parsley & Basil
- Olive oil
- Balsamic Vinegar
Method
Place the Tomatoes in a shallow oven proof dish. Drizzle with some of the olive oil, minced or finely diced garlic and balsamic vinegar.
Roast for approximately 20 mins in a moderate oven until slightly coloured and softened.
Finely dice all the remaining vegetables, ensuring they are roughly the same size to ensure even cooking.
In a large frying pan, fry some more garlic (quantity to your liking) with the Spanish Onion until softened. Add the Anchovies, Capers and Olives and fry until the moisture cooks off. Add the remaining vegetables and fry gently until tender.
Add the roasted Tomatoes then Parsley and Basil and mix through. If the mix is too fry, drizzle some good quality olive oil over the top.
